Mark Cheseldine – Head Chef
Mark Cheseldine joined The Castle Hotel in November 2010, having previously worked as Head Chef at one of Lincolnshire’s most prestigious bistros, Café Bleu. Mark began his culinary career 20 years ago at the Wig & Mitre in Lincoln, learning his trade under the tutelage of Paul Vidic. Starting as a pot washer, Mark worked his way through the kitchen, before becoming joint Head Chef.
Mark then joined Café Bleu as a sous chef, and worked his way up to the position of Head Chef. Mark spent 5 years as Head Chef at Café Bleu, winning numerous awards including the Nottingham Restaurant Award for Best Out of Town Restaurant 3 years running.
Mark counts Marco Pierre White as his biggest inspiration and has transformed The Castle Hotel’s restaurant, Reform since he joined the team in November 2010.
